Cérons is a little-known communal AOC of 40 ha of vines. The village's history has been linked to the vine since the time of the Romans. Like Barsac, it produces fine dessert wines with notes of roasted and candied fruit.
Since 1936, the Cérons AOC has produced dessert wines that express the full potential of its terroir. With the 20th century decline in consumption of dessert wines in France, winegrowers turned to producing dry whites and red wines under the Graves AOC.
According to wine brokers and other Bordeaux experts, the Cérons dessert wines are the best kept secret among fine dessert wines. Their small-scale production helps explain why they are relatively unknown.
The Cérons AOC wines are 80% Sémillon, and the coarse sands that cover compacted limestone terroir suit it perfectly. This light soil allows for a long ripening period that is followed by the concentration of sugars by noble rot.
The wines, which are sometimes sweet, thanks to these growing conditions, similar to those Barsac.
Candied and roasted fruit, with notes of citrus and exotic fruit, accompany a voluptuous and viscous texture, and its wonderful finish can be even livelier than that of Barsac wines.Average yearly production: 1 338 HlSurface declared (2009): 38 ha
With only 50 hectares in production, the Saint-Foy Bordeaux AOC is one of the oldest and least well-known in Bordeaux.
